Course Description

In this course, Carina Venter, PhD, RD, will review dietary approaches to manage eosinophilic esophagitis (EoE); discuss the nutritional and growth implications of exclusion diets; and examine case studies with food allergic patients. Originally presented at the Eosinophilic Oesophagitis Symposium on 07 September 2019 in Australia.

Dr Venter is an Allergy Specialist Dietitian and works as an Assistant Professor of Pediatrics at the Children’s Hospital Colorado and the University of Colorado Denver School of Medicine, where she is conducting research in allergy prevention and working with children with food allergies. She obtained her BS in Dietetics from the University of the Free State in South Africa. Venter furthered her education by obtaining a post-graduate degree and a PhD from the University of Southampton in the United Kingdom. She has over 90 publications in international journals and has authored several book chapters. Dr Venter is currently the chair of the European Academy of Allergy and Clinical Immunology (EAACI) work group on Immunomodulation and nutrition, and she is regularly invited to present at national and international conferences on topics relating to nutrition and allergic diseases.
